Estimation of the Percentage of Some Heavy Metals in Vegetables in the Market of Anbar Governorate, Iraq
The problem of food pollution is one of the most important problems facing and challenging the human being, due to the health problems and diseases that it causes. Vegetables are rich sources of vitamins, minerals and fiber and have beneficial effects as antioxidants. Vegetables contain essential heavy metals that the human body needs. However, increased levels of these heavy metals can cause many diseases. Accordingly, the current study aims to study the level of some heavy metals (iron, chromium, nickel, copper, cadmium and lead) in some vegetables (Cucumber, Eggplant, Zucchini, Tomatoes, Rashad, Celery, Radish, Basil and Chard) and the resulting effects on human activities and the resulted side effects using the atomic absorption device and comparing them with the permissible range internationally. The results obtained from this study indicate that the concentration of some minerals was higher than the internationally permissible limits.
